Sushi-Meshi
Sushi-Meshi is a specially prepared vinegared rice for making Sushi (すし, 寿司, 鮨 ) and it's variations.
INGREDIENTS
RICE
- Japanese rice - 3 cups
- Water - 3 cups
RICE SEASONING
- Vinegar - 200CC (1 glass) (1/2 white vinegar and 1/2 seasoning for sushi)
- Sugar - 6 tablespoons full
- Salt - 1 level dessert spoon
- Aji-no-Moto - 1 pinch
DIRECTIONS
- Mix all the ingredients of the seasoning and bring to the fire until the sugar dissolves. Use cold.
- Make Shiro-Gohan
- Spread a large wooden bowl, tray or plastic bowl with the seasoning.
- After 10 minutes, throw 100 cc of the seasoning over the rice, cover the pan and set aside for a few minutes.
- Then "loosen" the rice by the edges or sides of the pan with a wooden spoon and pour into the prepared dish. Mix, fanning with a fan or near a fan to cool. Use only after cold.
